"Specialty" eggs include kinds of eggs that have historically been more expensive, such as organic eggs and cage-free eggs. "Conventional egg prices exceeding specialty egg prices has occurred for the past three quarters but is atypical historically," Cal-Maine said in a statement outlining its second-quarter earnings. Organic and other specialty eggs still only make up a minority of the eggs sold in the US. Some consumers have started buying more expensive brands of eggs as prices on conventional eggs have gone up.
